EAT YOUR GREENS! soup.


I made this soup yesterday & it was very successful. 

Soak 1 cup of split peas overnight.

Dice 2 onions. Fry in oil & butter. Dice 2 celery stocks. Add to onions. Chop 4-6 cloves of garlic, add to pot. Put a little bit of hot pepper flakes in, because spice is always delicious. Add 4 cups of broth. Peel and dice 1 celery root, add to pot. Rinse split peas & add to pot. Add 1 bay leaf. 

Boil until split peas are almost done.

Chop up 1/2 cauliflower & 1/2 broccoli & add. Cook for 15 minutes. Chop up 1 bunch of swiss chard and 1 bunch of parsley. Add & cook until well wilted (5 minutes). Add 2 bags (or one large box) of spinach. Add 1 container of fresh tarragon. Zest of one lemon. Salt & pepper to taste. I added a bit more cayenne & some smoked sea salt. 

BLEND IT UNTIL SMOOTH!

Juice the lemon & add right before serving.

One cup is like eating 7 salads.

Ingredient list:
  • 2 Onions
  • 2 celery stocks
  • 4-6 garlics
  • 1 bulb celery root (celeriac) 
  • 1C dried split peas
  • 1/2 cauliflower
  • 1/2 broccoli
  • 1 bunch swiss chard
  • 2 bags (8 cups) spinach
  • 1 bunch parsley
  • 1 bunch tarragon
  • Zest and juice of 1 lemon
  • Salt, pepper, spices.
