Charred corn & zucchini salad
2 ears grilled corn
1 zucchini, halved & grilled
chopped parsley
A few pieces of chopped mint
green onion
feta
pickled red onion
Chipotle dressing
- 1/4 C greek yogurt
- 1/8 C mayonaise
- 3 cloves garlic
- zest and juice of 1 lime
- 1T honey
- 1T apple cider vinegar
- 1/8 C olive oil
- 1 chipotle in adobo sauce
- salt & honey to taste

Delicious soup!
Added chicken, umami spice, and roux
Added more spices, lentils & chickpeas. Cauliflower would also be delicious!

Green chile
1.5 onions, diced. Fry it in some oil. Add:
10 cloves of garlic, diced.
A tbsp of cumin (right at the end)
Make sure the onions and the garlic have a bit of brown / black on them. We want a nice smokey flavor.
Add a tin of diced fire roasted tomatoes, a can of green Chile (16 ox), some chicken stock and your chicken (breasts or thighs. I prefer thighs). If you want to add potatoes, dice them and add now. Cook it low and slow until the chicken is falling apart. Remove the chicken & pull it. Add whatever combination you want of corn, hominy & beans. Put the chicken back in. Let it cook on low a little bit longer. Add some lime right at the end. Serve with cornbread, guac, cilantro, sour cream & cheese. Yum.

smokey black bean soup
fry an onion
add celery
mushrooms
garlic
red pepper flakes
cumin
smoked paprika
tempeh bacon
Let it fry.
Add a tin of crushed tomatoes
Double the amount of water.
2 diced sweet potatoes
A can of green chiles
a tin or two of black beans
Let it cook for a while.
Add some concentrated veggie broth.
cooked quinoa & cooked lentils.
taste it & make sure it's delicious.
Top it with queso fresco, cilantro & avocando.

Vegetarian Cassoulet
2 onions, sliced. Caramelize them in lots of butter. Deglaze with apple cider vinegar if necessary. Chop some celery & carrots, add that. Add a little more butter & then add some flower to make a roux. Fry that until the flour turns brown. Add some black pepper & chopped up garlic. Maybe 5-6 cloves. Chop some mushrooms, 2 tomatoes & add them. Add about 1-2 Tbs of herbs de provence. Add some white wine, stock & beans. I used a can of butter beans, navy beans & something else. Dice a turnip & add it. Cook it till it's done.

1 C rice - rinsed
3 C almond milk
2 C water
1 t ground cinnamon
2 t vanilla
1 C almond slivers
Combine all ingredients but almonds and puree in a blender for 3-5 minutes. Add almonds and let sit in the fridge overnight.
